Irene, from urban planner to bakery: in the city she opens her "community oven"
A crowdfunding campaign and a wish: everyone can go and knead the bread
A crowdfunding campaign to help Irene Conti, 31 years old from Bologna, to open a community bakery in via Abba, Savena district: not just a commercial activity in which to develop her bread-making project but a place open to citizens in which at least once a week the doors would be open to allow those who wish to bake their own homemade loaf. The bread that Irene wants to produce will be kneaded by hand, with only mother yeast and attention to the origin of the flour, local and organic, stone ground and coming from 100% from grains of ancient varieties. Each product tracked.
A community oven
The name of the oven will be from "Da Madre Ignota - Community oven" and if everything goes in the right direction the opening could take place as early as spring: the place has been identified among those made available by the Acer calls. «The project stems from my love for bread and the desire to bring a little countryside to the city. I would like to give back to this food the daily sacredness with which it was eaten in the past and resume the custom of being in a community place to bake it "explains Irene on IdeaGinger, the platform that is helping her in the crowdfunding campaign that will continue until February 14 : in a first phase 11,505 euros of the 6,000 required to buy the oven have already been collected but in the meantime an unexpected event has arisen linked to an expensive flue to be installed at a cost of 10,000 euros. «My decision to proceed with this expense is given by the desire to meet the condominiums of the building - explains the 31-year-old - it is not my intention to create any inconvenience. I want the relations of neighborhood and with the community in which I will settle to be sincere and human ».
The bread "of the past"
After experiences abroad, the young graduate in urban planning decided to return to the city to follow this dream of hers, devoted to sustainability, environmental attention and sociability. «My love for the" bread of the past ", the one that evokes distant memories by its smell alone - explains Irene - goes hand in hand with my desire to share and share myself. This is why I will undertake to produce bread, biscuits, crackers, focaccia, breadsticks… and all the most disparate baked goods. I will sell at retail, on order, to self-managed realities (Camilla - Community Emporium, GAS - Solidarity Purchase Groups, CSA - Agricultural Support Community) and to local markets. But I also want my laboratory to be a meeting place: one day a week I will open the doors to those who want to bake their loaf. Under the pretext of laughing, joking and exchanging recipes and advice ».
